Directions
In a large bowl, combine the almond flour, cheddar cheese, Parmesan cheese, parsley, chives, baking powder, garlic powder, salt, and pepper.
In a separate bowl, beat the eggs until frothy, then add them to the dry ingredients. Mix until a thick batter forms.
Heat the olive oil in a large skillet over medium heat.
Scoop tablespoon-sized portions of the batter into the skillet, flattening them slightly with the back of a spoon.
Cook the fritters for 3-4 minutes on each side, or until golden brown and cooked through.
Remove the fritters from the skillet and drain on paper towels.
Serve warm, garnished with additional fresh herbs if desired.
Variations & Tips
For a spicier kick, add a pinch of cayenne pepper or some finely chopped jalapeños to the batter. You can also experiment with different cheeses, such as feta or goat cheese, for a unique flavor profile. If you’re not avoiding carbs, a small amount of cornmeal can be added for texture. For a gluten-free option, ensure your baking powder is gluten-free. These fritters can also be baked in the oven at 375°F (190°C) for about 15-20 minutes as a healthier alternative to frying.
