Directions

In a large bowl, combine the almond flour, cheddar cheese, Parmesan cheese, parsley, chives, baking powder, garlic powder, salt, and pepper.
In a separate bowl, beat the eggs until frothy, then add them to the dry ingredients. Mix until a thick batter forms.
Heat the olive oil in a large skillet over medium heat.
Scoop tablespoon-sized portions of the batter into the skillet, flattening them slightly with the back of a spoon.
Cook the fritters for 3-4 minutes on each side, or until golden brown and cooked through.
Remove the fritters from the skillet and drain on paper towels.
Serve warm, garnished with additional fresh herbs if desired.

For a spicier kick, add a pinch of cayenne pepper or some finely chopped jalapeños to the batter.
